Production Details
Gently whole cluster pressed, cold settled, fermented in a stainless-steel tank, no malolactic fermentation. No cooperage. 100% stainless steel.
We use an innovative low temperature vacuum distillation process to remove the alcohol while preserving 100% of the natural aromas and flavors from the original wine. The acidity and flavors are slightly impacted as alcohol is removed. We dilute the wine with water to compensate for alcohol lost and add natural flavors to complement existing flavors of the wine. We then put the wine through its second fermentation which occurs in large pressurized tanks which is where the wine develops carbon dioxide gas creating tiny bead size bubbles reminiscent of some of the greatest wines of Champagne.
